Recipe: Turkish Eggs

Born and bred Istanbul, I grow up eating Cilbir, as we call it in Turkish.

Simply it is eggs, yoghurt and melted butter in a dish. First you let the yolk out and eat this deliciousness with dipping your bread into the yoghurt.



Turkish Eggs

I hear you saying eggs with yoghurt ? For breakfast ? It may be one of the best breakfast that has ever made. If you haven't eaten them yet, what are you waiting for ?


Ingredients

2 eggs

4 tablespoons of yoghurt 

2 tablespoons of butter

1/2 tablespoons of chilli pepper 2 toasted breads.


Preparation


1 - Firstly we have to poach the eggs. In a pot, put water and bring it to simmer. Add 1 tablespoon of vinegar into it. Crack the eggs into 2 different bowls and verrry slowly put them into the simmering water. Wait about 2.5-3 min for them to cook. Gently take them out and put them into plate with a towel to get the wet off.


2 - Now get the yoghurt and stir it a bit to make it smooth. Put it into the bowl you would like to serve, spread it to make it flat.


3 - Put the eggs onto the yoghurt.


4 - Now melt the butter in a pot on medium heat, when it is completely melt put chilli pepper - give it a nice stir for 30 seconds, take it off the heat.


5 - Pour the butter onto the Eggs.

6. Serve it with toasted breads on the sides, for dipping.





Tip. If you are making multiple Turkish eggs, poach eggs before put them iced water to let them wait. Right before serving, place them in hot water to let them warm about 30 seconds and serve them.





Now you have the most amazing breakfast or brunch.
